Again this week we are highlighting seasonal fall greens. Between Bradford Farm, Dorr Farms and Wild Hope we have every kind of green your menu might need for the chilling weather and new season. Dorr Farms just began harvests on 3 new greens which are the first 3 highlights below! We still have Tatsoi, Arugula and a couple cases of Komatsuna left from Wild Hope. 

 

Important Information! 
- Wakefield cabbage in 6 weeks! 🥬 
- Dutch Fork pumpkins delayed 1 more week 🎃 rain prevented harvest 

- Low availability on Autumn Frost squash but we do have plenty of other small squash available- Acorns and Delicatas.
- We’ve got lots of Cushaw heirloom crookneck squash, it’s a historic food way of the south and we want to see it on menus, pick up a case and give it a shot!
- So you are aware, once the Dutch Forks are ready to go, our primary focus will shift to moving that “squash” and less so on our other varieties from partners but we will still offer the Blue Hubbard, Cushaw, Acorns and Delicatas while they’re still here.

Rapa Greens (ie. rape greens) - Dorr Farms

Old-school Southern greens with a little attitude. Rapa greens (also commonly known as rape greens) are part of the brassica family—kin to turnip and mustard—but they stand out for their balance: peppery up front, mellow underneath, with a deep, savory finish when cooked down. Their leaves are paper-thin and soak up flavor like a sponge. Dorr Farms harvests them young so the leaves stay tender and vibrant. Quick to wilt, full of flavor, and built for the pan—honest farm cooking at its best. 


Curly Mustard Greens - Dorr Farms


Also from Dorr Farms, this mustard truly is distinctly different from the broadleaf type. Besides the obvious differences in appearance, the curly being ruffled and thicker, and the broadleaf being larger, flat, and thinner, the flavor is quite different, and so should be chosen for different applications in the kitchen. Curly mustard packs more of that spicy heat than the broadleaf type, and is slightly on the bitter side. Its thicker leaves also mean they can take more heat in the cooking process and still maintain its structure. This is the greens of choice if you’re looking for striking appearance, robust flavor and some toothiness in your dish.

 

Carolina Broadleaf Mustard Greens - Dorr Farms

While it is still a ways out before we have our heirloom Feaster family mustard, we are blessed to be able to offer the Carolina Broadleaf mustard through our partner farmers at Dorr Farms. Crunchy and mild flavored stems, are balanced with the peppery snap of the tender leaves, perfect for the cooler weather we’ve been having lately. A true southern classic fall green no matter how you decide to use them. 


Turnip Tops - Dorr Farms


Picked young and tender, Dorr Farms’ turnip tops are the underrated greens that deserve a seat at the table. They’ve got that Southern soul—peppery, a little nutty, with a clean, earthy finish that reminds you where they came from. The leaves cook down fast, turning silky in a hot pan with olive oil or bacon fat, but they’re also bright and lively enough to use raw if you want that bite. Fresh, vibrant, and honest—real greens, grown right.
