This week we are highlighting the wonderful range of fall greens, and they are coming in hot! Our fall crop Bradford collards are absolutely beautiful! A NEW one for us this season is Russian red kale from Dorr Farms. They are also supplying us with Scotch curly kale and turnip tops until ours are ready. Another new one for us is Tatsoi Asian mustard greens from Wild Hope Farm. Be sure to check them out below and give them a go in the kitchen!

Turnip Tops - Dorr Farms


Picked young and tender, Dorr Farms’ turnip tops are the underrated greens that deserve a seat at the table. They’ve got that Southern soul—peppery, a little nutty, with a clean, earthy finish that reminds you where they came from. The leaves cook down fast, turning silky in a hot pan with olive oil or bacon fat, but they’re also bright and lively enough to use raw if you want that bite. Fresh, vibrant, and honest—real greens, grown right.

Bradford collards, our staple crop on the farm, are superior to every collard on the market. Our family has been growing them since the 1850s. They are completely unlike any of the commercially available collards today. Ours have been selected for 170 years to be sweet, tender, and crisp whether cooked or raw, stems and all. They cook much faster and produce a far more flavorful and tender product.

These are available year round, so feel free to make them a mainstay on your menu!

Tatsoi (Asian Mustard) - Wild Hope Farm 


Small, dark green spoon-shaped leaves that look delicate but hold up like champs. Tatsoi’s got this quiet depth to it—somewhere between spinach and mustard greens, with a hint of sweetness and a whisper of brassica bite. You can eat it raw and silky in salads, or wilt it just enough to wake up its flavor. Grown clean and fresh at Wild Hope, it’s the kind of green that doesn’t need showing off—just good heat, a touch of salt, and it really sings.

A rare Southern-grown treat—Wild Hope’s prickly pears bring vibrant magenta flesh, a naturally sweet, melon-like flavor, and subtle floral notes. Their high juice content makes them excellent for syrups, cocktails, sorbets, and sauces, while the striking color holds beautifully in both sweet and savory applications. Harvested at peak ripeness, these fruits deliver brightness and tropical flair straight from the Carolinas.
