It’s onion season ladies and gentlemen! With a couple cool varieties and a ton of layers, our good friend Matt Fry is pumping out some killer spring onions! His Italian torpedo spring onions are picked young and thin (nickel/dime diameter). Originating from Calabria, Italy, this variety was grown for sweetness and tenderness, ignoring shelf life for the best flavor. He’s also brought along his red and yellow bulb spring onions, grown with the same attention and care that he gives towards all of his crops! These onions are exceptional. Their texture is still young with the sugars forward!
Partnered with these amazing onions, we carry Matt’s mixed loose leaf kale. This red n’ green kale has been harvested just shy of full maturity where they’ve gained their structure, but haven’t become tough. If you’re looking for some tender, beautiful, healthy mixed kale you’re in luck! The green and red balance the flavor profile and textures perfectly.

NEW! Italian Torpedo Spring Onions (Tropea), nickel-dime diameter - Fry Farm

Matt Fry’s Italian Torpedo onions — often referred to as Tropea onions — are a different class of allium. Originally from Calabria in southern Italy, this variety was selected for sweetness and tenderness rather than storage. The long, tapered shape and deep red skin give way to a pale interior that’s crisp, juicy, and notably low in sulfur bite.
Matt is harvesting these young, at nickel-to-dime diameter, which completely changes how they eat and how you can use them.
At this stage, they’re exceptionally tender, with a high water content and very low sulfur bite. The long, tapered bulbs are still developing, so the flavor leans sweet, lightly fruity, and clean, without the sharpness you’d expect from a mature red onion.
Grown at Fry Farm with the same attention Matt brings to all of his crops — thoughtful spacing, companion planting, and steady soil management — these onions come in clean and hydrated, with tight structure and a balanced flavor. They’re harvested as spring onions, so the texture is still young and the sugars are forward.

Matt Fry’s mixed kale is a loose blend of green curly and red varieties, harvested before full maturity — when the leaves have developed structure but haven’t turned tough. It’s a practical picking point: enough size to work with, but still tender enough to handle quickly in the kitchen.
The mix gives you contrast right out of the box — tight, frilled green leaves alongside flatter, red-toned leaves with a slightly deeper flavor. Together, they balance each other: the green brings brightness and texture, the red adds a mild earthiness and color.
Grown with Matt’s usual attention to soil health and companion planting, the leaves come in clean, hydrated, and consistent, even with natural variation between the two types.
