Bradford Farm Availability & Updates 8/18/25-8/22/25

Alright, welcome to this week’s availability everyone! We have a slew of new produce from our friends up in the mountains. See all new crops in the highlights below, you can also read a detailed description of who this produce is coming from and what makes it the absolute best on the market. Lively Orchard and Clem’s Organic Gardens are two prime examples of why we work to distribute for other farms who don’t have our network all throughout the southeast region. They do a spectacular job growing produce, stewarding the land, and making sure that the unique qualities and flavors of the south are triumphed in your kitchen.

⚠️ **Highlights of the week**⚠️

NEW! Davidson River Red Beets- Clem’s Organic Gardens

Short story:

Sweet, mineral-driven mountain beets with zero bitterness; dense flesh, vivid color, clean finish.

Long story:

I assure you these are not your standard red beets. Grown in the rich, flood-plain soils along the Davidson River, they take on a highly concentrated sweetness with absolutely none of the earthy bitterness that chefs often associate with conventional red beets. Their texture is tighter, with a clean snap when raw, and they roast down to a dense, jewel-toned flesh that holds color without tons of bleeding. You should notice a brighter finish on the palate—super sweet, mineral-driven, and balanced—ideal for dishes where the beet’s flavor needs to shine without overpowering. Clem’s beets are primo— the best of the best.

NEW! Butterbaby Squash- Clem’s

Short story:

Mini butternut with smooth, nutty flesh; thin skin, uniform size, quick to roast or puree.

Long story:

Butterbaby is a small, personal-sized butternut squash with a sweet, nutty flavor and smooth flesh. They are beloved in the restaurant industry for their uniformity and quick cooking time—perfect for roasting whole, halving for individual portions, or pureeing into soups and sauces. A major bonus to these compared to your average butternut is the thinner skin, making them easier to work with and less wasteful in prep.

NEW! Appalachian Gold Potatoes- Clem’s

Short story:

Creamy, buttery golds with thin skins that crisp beautifully; hold structure when roasted, velvety when mashed.

Long story:

Clem’s Appalachian Golds are grown in the cool mountain soil of Pisgah Forest, where the mineral-rich loam produces a potato with exceptional creaminess and depth of flavor. These gold potatoes hold their structure beautifully when roasted but mash down into a velvety, almost buttery consistency. Their thin, golden skins crisp up quickly in the pan, making them a versatile choice for both rustic and refined plating.

NEW! Ginger Gold Apples- Lively Orchard

Short story:

Early-season mountain apple; crisp, pale-gold skin, honey-sweet flavor with a citrusy finish. Holds color when cut, excellent raw or cooked.

Long story:

We’re excited to be bringing back apples from Stephanie Lively’s family-run orchard in Hendersonville. Stephanie has taken over daily operations in recent years and brings a chef’s eye to the orchard, paying close attention to ripeness, storage, and handling so the fruit arrives crisp and balanced. Her Ginger Golds are a true early-harvest standout. Grown in the cool air of Hendersonville’s mountain ridge, these apples ripen with a pale golden skin that hints at the honeyed sweetness inside. Unlike many early-season apples, Ginger Golds hold a firm, crisp texture with a bright snap and a balanced flavor—sweet upfront with a clean, citrusy finish. Their flesh resists browning, which makes them an excellent choice for raw applications: think salads, cheese pairings, or finely sliced garnish where visual appeal matters. Cooked, they soften quickly into a fragrant, delicate sauce or filling that carries both sweetness and acidity in harmony..

NEW! Asian Pears- Lively Orchard

Short story:

Crisp, juicy, apple-like snap with pear sweetness; clean, refreshing finish, ideal for salads or cheese boards.

Long story:

Stephanie’s Asian pears are crisp, juicy as hell, and refreshingly light—somewhere between the snap of an apple and the delicacy of a pear. The cool nights in Hendersonville help the fruit hold onto its sugars while keeping the flesh tight, so you get that clean crunch without mealiness. Perfect for salads, cheese boards, or as a cooling contrast on composed plates..
