Hello chefs,

 

This week we’re reintroducing Clem’s Butterbaby Butternut squash - a petite butternut variety small in size but not small in flavor. In fact, its concentrated butternut flavor makes it a more appealing product in the kitchen beyond its miniature size. I have a story about them in the highlights with more information for you to sink your teeth into.

I am also very excited to be bringing in Wild Hope’s green bell peppers - they are the best green bells I’ve ever had, they lack in traditional vegetal bitterness, and have a sweetness to them. They’re also surprisingly juicy and firm in texture. Truly delicious for something as simple, humble, and basic as the bell pepper. 

For a limited time, if you order banana peppers you’ll be receiving Dorr Farms’ mixed Baby Banana peppers. Something truly seasonal and fleeting. These peppers boast a beautiful assortment of flavor and color. 

Lively Orchard apples are just beginning to take off this season. NEW! Butterbaby Butternut Squash - Clem’s Organic Gardens (Appalachia - NC) 

A true miniature butternut, Butterbaby produces small, remarkably uniform fruits — tan skin, deep orange flesh, running about a pound each. That consistency alone makes it a rare find for a professional kitchen where portion control usually means trimming down, not simply plating whole.

But size isn’t the reason we’re excited.

Clem grows these in the alluvial soils along the Davidson River — the same ground that gives his potatoes and root crops their depth. Winter squash spend months on the vine building sugar and dry matter before harvest, so soil, water, and time all show up in the finished fruit. That’s especially true here: the flesh cooks down smooth and creamy, with a sweetness and nuttiness that variety trials have repeatedly ranked above Honeynut for flavor.

The skin is thinner than a standard butternut, too — less fabrication, less waste, more usable yield per case.

For the Kitchen

Roast whole until deeply caramelized, split, finish with cultured butter

Halve and roast as a composed individual vegetable course

Confit in olive oil or brown butter

Purée for soups, sauces, ravioli filling, or mousseline

Roast and glaze with maple, cider, chile, or warm spice

Grill over live fire, finish with acid and herbs

Stuff halves with grains, mushrooms, sausage, or whatever’s in season

The uniform size means a whole or half squash lands on the plate as an intentional portion, not an oversized afterthought.

There’s a subtle sweetness and minerality to the profile that I’ve not tasted in other green bell peppers we’ve supplied. I can sit down and eat an entire pepper by itself, it’s so enjoyable. There’s quality so truly second to none and we’re proud to have these peppers available to you.
