We are blessed to have a cornucopia of offerings this time of year. Summer crops are still available while overlapping the beginning of fall crops! What a great opportunity to be creative in the kitchen during this narrow overlap of seasons.
And part of this overlap is due to our great farmer partnerships. One of our last sources for heirloom tomatoes, sweet corn and NOW the Blue Lake pole snaps is Dale Acre in the Blue Ridge mountains. The summer crops arrive later there, and we are fortunate to follow the season north with Dale.
From late summer heirloom tomatoes to early fall Ginger Gold apples, crisp Davidson River red beets and Butterbabies, to bright sweet corn, make sure you take advantage of this ephemeral bounty.

NEW! Blue Lake Pole Snap Beans - Dale Acre
The Blue Lake pole bean has a pedigree that goes back over a hundred years! It became wildly popular in the early 1900s due to its lack of strings that most green beans grown back then had.
We are truly fortunate to be able to work with farmer Dale Acre to provide these amazing stringless snap beans to you wonderful chefs. These are grown in the Blue Ridge mountains where the summers are a little less intense allowing these beans to grow with less stress. These are easy to prep, sweet, tender and crisp, and full of flavor.

NEW! Davidson River Red Beets- Clem’s Organic Gardens
Short story:
Sweet, mineral-driven mountain beets with less bitterness than standard reds; dense flesh, vivid color, clean finish.
Long story:
I assure you these are not your standard red beets. Grown in the rich, flood-plain soils along the Davidson River, they take on a concentrated sweetness with less of the earthy bitterness that chefs often associate with conventional red beets. Their texture is tighter, with a clean snap when raw, and they roast down to a dense, jewel-toned flesh that holds color without tons of bleeding. You should notice a brighter finish on the palate—sweet, mineral-driven, and balanced—ideal for dishes where the beet’s flavor needs to shine without overpowering. Clem’s beets are primo— the best of the best.

Butterbaby is a small, personal-sized butternut squash with a sweet, nutty flavor and smooth flesh.
