Hello chefs,
Heirloom cherry tomatoes are back! Our Amish friends will be supplying them to us until their season is done. These tomatoes have many colors and flavors — the depth of variety is the best part. They are well grown and very delicious. We’re also bringing in red bell peppers from the same farmers!
Winter squash is getting ready to hit hard. We’ve highlighted Clem’s wonderfully sweet Butterbaby squash (butternut type) the past couple weeks, this week I wanted to highlight a much much older squash: the Delicata. A cream-yellow fleshed fruit with sweetness that rivals the Butterbaby.

Delicata Squash - Wild Hope
Did you know Delicata squash has been cultivated for thousands of years going back to the indigenous people of Central and South America? Prized for their incredibly sweet fresh and thin, edible skin, the Delicata squash is one of the coolest and tastiest squashes to be serving up heading into the fall! You can take advantage of Delicata’s size and shape by slicing the squash into rounds, extracting the seeds and serving fried, grilled or roasted. You can earn some presentation/ plating points with that.
