Blue Hubbard squash is a large, winter squash variety known for its thick, bumpy skin and vibrant blue-green color. Its orange to golden-yellow flesh is dense, fine-grained, and holds a large cavity filled with pulp and cream-colored seeds. It’s great for fall soups and bisques or for roasting with other fall root crops and veggies. They can get pretty big too and range in size a lot. We pack them in roughly 30# cases.
