Known throughout the South as the “Sugar Fig,” Celeste has been the benchmark for fresh-eating figs for generations. First brought to the American South centuries ago, it became the region’s defining fig thanks to its exceptional sweetness, reliability in hot, humid climates, and ability to produce consistently beautiful fruit where many Mediterranean varieties struggle. 

Our Celeste figs come from Hickory Bluff Berry Farm, where long summer days allow the fruit to fully develop its rich sugars before harvest. Beneath their dusty violet-bronze skin lies a rose-colored interior with notes of honey, melon, dried fruit, and, when left to fully tree-ripen, subtle hints of Concord grape. Unlike many figs, Celeste possesses a naturally closed eye, helping the fruit resist splitting and souring even during Southern humidity. 

The flesh is dense, silky, and remarkably jammy while maintaining enough structure for both savory and sweet applications. Fresh burrata, country ham, blue cheese, roasted duck, pork, and aged balsamics all find a natural partner in Celeste, while its concentrated sweetness also lends itself beautifully to preserves, tarts, and wood-fired desserts.

Few fruits capture the flavors of a Southern summer quite like a tree-ripened Celeste. It is one of those ingredients that requires very little intervention—simply harvest at peak ripeness and allow its natural sweetness to carry the dish.
