Matt Fry’s Lancelot leeks are coming in small and young, harvested before full size when the texture is most tender and the flavor is at its cleanest. This variety is known for its mild, sweet profile and strong field performance, but at this stage, it’s really about intention — less fiber, more balance.
The shanks are slender and well-blanched, with tight layers and a high moisture content. You get a soft, onion-like sweetness without the heaviness or sulfur edge of more mature leeks.
