New potatoes are less about variety and more about timing. They’re the first potatoes lifted from the field before the plant has fully matured — harvested young, when the skins are still thin, the sugars are high, and the interior hasn’t converted fully to starch.
Historically, new potatoes marked the beginning of the harvest season across Europe and early American farms. They were pulled early out of necessity — to make room in the field, to bring in early income, and because after a long winter, fresh potatoes were something people didn’t wait on. Over time, that early harvest became prized not for convenience, but for flavor and texture.
Our C-size new potatoes are small and uniform — ideal for consistent cooking and clean presentation. Because they’re harvested before full maturity:
• Skins are delicate — no need to peel
• Moisture content is higher than storage potatoes
• Starch levels are lower, giving them a waxy, cohesive texture
• Natural sugars are more pronounced, especially when roasted
The result is a potato that holds together when cooked, with a subtle sweetness and a smooth, almost creamy bite.

• Roasted: Toss whole or halved with oil and salt; high heat brings out their natural sugars and gives a light, even crust
• Boiled: Cook gently in salted water and finish with butter and herbs — skins stay intact, interiors stay tender

• Confit: Low and slow in oil for a silky, uniform texture
